Attempting fun holiday recipes around here is sometimes successful and other times…not so much. I managed to get through Valentine’s cookie decorating with the kids this year with everyone’s sanity still intact, but our gingerbread house project in December ended with an epic mess and at least one child in tears.
We took a gamble and set aside an afternoon to work on two Easter treat recipes – one that has been a yearly favorite, and one that I spotted on Pinterest and knew the kids would love!
First up, a yearly tradition: Butterscotch Nests
I melted a package of butterscotch baking chips with a cup of peanut butter and stirred in some chow main noodles. Then Maya and Noah got to work scooping spoonfuls of the gooey mixture onto parchment paper and adding candy-coated chocolate eggs to the center of each nest. Easy and delicious!

Butterscotch Nests
1 – 12 oz. package butterscotch chips
1 cup creamy peanut butter
3 cups chow mein noodles
Candy eggs or jelly beans
In medium saucepan, melt butterscotch chips with peanut butter over low heat until smooth and combined. Add chow mein noodles and stir until evenly coated. Drop by spoonfuls onto parchment paper in nest shapes. Press chocolate eggs or jelly beans lightly into center of each nest. Let cool until set.
Our nests complete, we got to work on the new-to-us recipe – Bunny Race Cars! These were so fun to put together, the finished bunny cars were adorable, and it gave me an excuse to buy Twinkies (which are apparently back).
I did the prep work of cutting marshmallows in half for the wheels and making seat notches in each Twinkie. The kids used decorator icing as glue to add pretzel steering wheels, the bunny drivers, wheels, and sprinkle hubcaps.

8 Twinkie snack cakes
8 Bunny Peeps
8 mini pretzel twists
16 large marshmallows, cut in half
Decorator icing
Colored sprinkles
Cut wide notch in center of each Twinkie. Use icing to secure pretzel in front of notch for steering wheel and place bunny behind pretzel. Use icing to stick sprinkles in center of each wheel and to attach wheels to cars.
Both projects done, we were still smiling! Snack success!
